Restaurant Robots: The Future of Dining Automation




Restaurants increasingly integrate robots into their operations, handling tasks from cooking and serving to cleaning. The latest innovations were showcased at the National Restaurant Association's recent annual show in Chicago.

Highlights from the National Restaurant Association Show


Tech companies showcased advanced robotics designed to streamline restaurant operations:


- PizzaBot: This robot accurately dispenses toppings, handling one of the most labour-intensive parts of pizza-making.

- I-Robo2: A robotic stir-fry machine that can prepare 30 meals per hour.

- Alpha Grill: Cooks up to 200 hamburger patties per hour and self-cleans after use.

- Voglebot: An all-in-one automated fry cook for fries, chicken fingers, and more.


Robots serving food and clearing tables were also on display, such as the 4-foot-tall Dinerbot from Keenon, capable of carrying up to 88 pounds on its three serving trays, and Servi from Bear Robotics, which can transport two trays and a tub for used dishes.



How It Works


The I-Robo stir-fry robot, already in use in Japan, exemplifies how these machines function:


- A touchscreen menu guides a human cook to add ingredients like oil, rice, and vegetables into a heated bowl.

- The bowl then spins and mixes the ingredients, cooking a meal in 2-3 minutes before cleaning itself.



The Challenges


While these robots are innovative, they face some hurdles:


Efficiency and Effectiveness: Early versions can be prone to malfunctions and may not yet match the efficiency and versatility of human workers.

- Case Study: Zume, a Silicon Valley pizza robotics company, shut down partly due to technical issues, such as cheese sliding off pizzas during preparation.



Industry Perspectives


Michelle Korsmo, CEO of the National Restaurant Association, acknowledges the growing role of robotics: "The future of kitchens will certainly include more robotics. The key is integrating these technologies to enhance both efficiency and the dining experience."



Zoom Out


Major restaurant chains are investing heavily in robotics:


- Sweetgreen acquired the robotic food-prep startup Spyce and opened its automated restaurant, Infinite Kitchen.

- Chipotle founder Steve Ells has launched a vegan takeout chain called Kernel, where robots handle most of the cooking.



Behind the Scenes


While robot cooks and servers attract attention, restaurant technology's most significant impact is often hidden. AI enhances order-taking, inventory management, staff scheduling, and home delivery.
